Foraging at Fischer's
From flowers that taste like pineapple to leaves that taste of aniseed, you will be guided through this culinary journey by one of our professional foragers.
About
We are delighted to collaborate with Totally Wild UK, whose main goal is to excite people with the amazing flavours to be found in the wild. On our Foraging Courses you’ll see that wild food is everywhere!
Having been in love with the wild world since childhood, James Wood founder of Totally Wild spent many years developing his skills and knowledge of all things “wild” from mushroom paper to elderberry salt. James is now seen as one of the UK’s top foraging and wild food experts, he’s on a mission to share this knowledge and show people that wild food is not only everywhere, it can taste amazing.
Sam – forager and teacher – has a huge love of nature and has always picked wild fruit with her mum and nana from being a little girl. Sam started seriously getting into foraging after her husband bought her a private foraging course for her birthday about 8 years ago which sparked something bound within Sam, she’s never looked back and is quite literally eating her way around the UK’s amazing countryside and coasts.
Your day will start from 9.00am with arrival at Baslow hall where you will be welcomed with wild teas and coffees. Following introductions, we will get into the mind-set of a forager before heading out to one of Derbyshire’s wild spaces to discover the vast array of wild edibles lying all around us. Whilst on the forage you will try a selection of pre-made tasters from infusions to jams, chutneys, salt pickles, syrups, salts, and herb mixes throughout the morning discovering the huge abundance of wild ingredients that lie a stone’s throw from the tables you dine at. From flowers that taste like pineapple to leaves that taste of aniseed, you will be guided through this culinary journey by one of our professional foragers.
Return to Fischer’s for a 3-course lunch prepared by our Head Chef Adam Thackery and hosted by our forager and team at around 1.00pm with a menu inspired by your day, enjoying truly local, seasonal and fresh wild ingredients at their best. Finish your day by exploring the fantastic grounds surrounding Baslow Hall and discover the micro-herbs and kitchen garden.
